What makes a motorcycle only run when choke is on?
Put it all back together and still the same symtoms remain. Also ran seafoam through the gas and air intake. Only runs when choke is on. Will rev up, but only after about 5 minutes when the engine is warm. Will stall out if I rev it too quickly. Stalls every time I take the choke off.

Fuel goes bad after time, and the first circuit/jet to clog with varnished up fuel is the pilot jet. This circuit delivers fuel for idle, and has the smallest passages found in carburetors.

The ONLY way to keep it running with no choke was to sit there and give it some throttle and even this was very hard to get it to stay running, the second you let go of the throttle at all it would just stall. But then if you put full choke on again it would idle fine (fast idle on full choke).

They typically have very small orifices and are prone to being plugged up. The pilot jet essentially controls the flow of fuel in the closed throttle through the early stages of throttle opening. If it is clogged it can cause a situation like you describe. This may just solve your problem without too much screwing around.
