Do you need to play Harvest Moon in order?
Harvest Moon games that came out after the first Story of Seasons aren’t real HM games (completely different developers). I’d recommend skipping them personally because they overall aren’t that great. If you want to skip, the games are: The Lost Valley, Skytree Village, Seeds of Memories, and Light of Hope.

I think Harvest Moon tended to have deeper and more interesting seasonal events and animal care, while Stardew Valley has more depth in the game progression systems (gaining skills and leveling up) as well as the mining (and combat) system. Definitely recommend both!
Is Friends of Mineral Town Switch worth it?
It can be repetitive and too easy to earn money, but you’ll hours spending hours exploring mines and perfecting your crops. Additionally, the Switch version retains the portability of the original GBA title, so FoMT is an excellent Story of Seasons experience for newcomers and long-term fans alike.
