Can you bend valves by turning engine by hand?
You should see what the valves do to the pistons. If the engine is turned by hand and not an impact, starter or any other stupid crazy methods, you’re fine.
What causes valves to bend?
Bent valves occur when there is a serious problem with the timing of the engine. This is most commonly caused by a broken timing chain or timing belt. It can also occur if the timing belt slips and causes a misalignment of the camshafts and the valves.

It is possible to bend valves with a ratchet, but you would have to try pretty hard. If you were careful and calm when you felt the contact, you should be okay. Best way to find out at this point is to put on the belt and give it a go. You could do a leakdown test, but that requires a few special tools.

The only way that it could have changed the way the engine ran is if you happened to get the cam installed a tooth off in one direction or another off of 180 degrees from the way it was before because if you got it exactly in line and it was exactly in line before then what you did has absolutely no effect.
