Why is my Honda Accord air conditioner not working?

Im just so disappointed with my 2008 model and with Honda. The air conditioning temperature jumps from hot to cold to hot after the car has fully warmed up. Even on cold days when it is freezing out, we can have the temp set to 75 degrees and frigid air is blowing out of the vents.
