What can I do about my BMW K1200 stalling?
Get a Power FRK to settle out the bumbling flat-spot around 3K. Seems to help the low end stalling a bit too. Buy a cam chain tensioner to stop the chain rattle, especially on start up. You can do it yourself and it costs about $120 (US).

Is it normal for a VW engine to rattle?
I’ve certainly heard the same thing from many modern VW/Audi engines and professionally I consider it normal and harmless, although I find their 4 cylinder engines to be absurdly noisy in general and find that startup noise and general engine noise unacceptable personally.
What kind of oil should I put in my BMW R1200RT?
Your engine oil should be Castrol 20w-50 or Castrol Power 1 10w-50 if you want a full synthetic. Naturally, check the valve clearances and the rocker shaft end float as these can also make noises. Noises are a bit louder as it is an air-cooled engine.
