You can fight it once more after completeing the main story of the DLC pack. Just check the bounty board in Oasis. It should be called “Treasure of the sands”. This is the last time you can do it legitly, without reseting playthrough or continuing to UVHM.

Bullets will pass through the Leviathan’s hide, and once all outer weak spots are destroyed, a quick search by firing bullets into the Leviathan’s hide will allow the character to find and destroy the single remaining node within its mouth.
