Does water kefir need lemon?
Water Kefir can be made from almost all water (except reverse-osmosis or heavily chlorinated). All you need to add is some sugar, a couple pieces of dried fruit (sometimes) and a little lemon (sometimes).
Why do you put raisins in water kefir?
One of the reasons to add the raisins is that they will gradually rise to the top and “tell you” when the water is fermented. It is very accurate. Even when the raisins float you can leave it another day at room temperature to feed the bacteria in optimal conditions.

As a general rule, if the water kefir grains are capable of turning sweet water into slightly tangy and fizzy kefir within 48 hours, they are fine. Active and regular fermentation is the main sign that the microorganisms in the kefir are healthy.

Within reason, water kefir grains like to be warm, but out of direct sunlight. Ambient temperatures of 68°-78°F will yield the best results, though water kefir grains culture well even up to 85°F.
