What happens if you only change one set of brake pads?
If you replace only one of the pad of a set both will be of unequal thickness and will cause uneven pressure on both side of the wheels. This will in turn cause one side of wheel stop earlier than other and skid or move vehicle to one side while braking. On high speeds effect will be felt more.

The brake pads have their guides, which should be lubricated for the brake pads to glide forward and backward on the brake caliper bracket easily. When dust and rust get collected on these bracket slides, the brake pads will get stuck in the brake pad bracket and push at the brake disc.
Can a caliper slide over new brake pads?
Reposition the caliper. With the pistons retracted, the caliper should slip over the pads with little effort. Sometimes the fit is tight and the caliper will slide on the newly installed brake pads. If the pistons catch on the brake pads, you might need to check that you retracted the piston completely.
