We too are towing a 2014 Wrangler. I think the reason for disconnecting the battery is so that with the key in the ON position, to unlock the steering wheel, the battery won’t be drained. HOWEVER as far as I know Jeep Wranglers have not had a steering wheel lock for several years!
Can You tow a 2011 Jeep Wrangler toad?
Your 2011 is basically the same vehicle, with a different engine and transmission. I have towed it for 5 days in a row without disconnecting or starting the engine. You do not have to disconnect the battery or leave the key in the ignition. There is no steering wheel lock on this vehicle.

This will free most steering wheels that have become locked on accident. When this is performed, the steering wheel may seem to not want to move but you must turn the key and the steering wheel at the same time.
Why is my steering wheel locked with a worn key?
