Letting it sit until it cools possibly allows enough time for air to seep in and equalize the pressure so it’s good for another 10 minute run. Is the engine sputtering and slowly dying or when it’s good and hot is it like you flipped a switch? If it’s running fine and then just dies it could be the ignition coil failing when it gets hot.

The carb is working properly but seems to be flooding when the choke is on and won’t start with throttle all the way down. Not sure what you mean by it is working properly but flooding when the choke is on. Running the engine with the choke on definitely floods it and it should.
