What should normal operating temp of jeepz be?
This is an old post. FYI you need to run a 195 deg thermo. The temp will run at 210 and the PCM will adjust the air fuel to try to attain 210. By running 165 you are not allowing the engine to come to temp and gain the efficiency it can reach. I doubt the intake and headers directly caused you to run hotter.

What should my Jeep Cherokee be running at?
210 is the normal operating temp for these. If it’s dropping a bit lower you may have a sticky thermostat. It wouldn’t be a bad idea to swap those anyways if they haven’t been done yet. What should my Jeep be running at at idle?
195 or 210 should be your idle temp. Your thermo might be bad, it’s a pretty easy repair. I don’t think you’ll ever run into the problem that it runs too cold. i also don’t think you need to worry about the jeep not being able to go up hills. if your serp is tight you shouldn’t have any more issues.
Why does my Jeep Cherokee Run so hot?
Lol, but I’d be more likely to put in a 195 or slightly hotter stat in than leave it completely without one Engines with no stat will have trouble warming up, except on a hot day. Then they will run hot and not cool down from the coolant not spending enough time in the radiator to remove heat.
