What does light dry malt extract do?
When used alone, brewing with light dry malt extract will produce a pale straw colored beer with a sweet malty character. Specialty grains can be added to change the color and flavor, making it an excellent malt base for any beer style.
How do you convert LME to DME?
Extracts and malts and adjuncts all have a “points per pound per gallon” rating that you can look up from the supplier. In general, dry malt extract gives you 44 pppg and liquid 37 pppg. 5 pounds of LME gives you 185 points. To get the equivalent points from DME you divide by 44 to get 4.2 pounds.
Is dried malt extract the same as Diastatic malt powder?
There are two general types of malt: diastatic and non-diastatic. Diastatic simply means it’s capable of converting starch into sugars vis enzymes. Powdered malt extract may be diastatic but it’s probably more likely that it’s a sweetener.
How do you use dried malt extract?
DME—To keep Briess CBW® dry malt extract (DME) from clumping, dissolve it in hot but not boiling water (100-120°F) to make a slurry, then add the slurry to your boil. Standard homebrew recipes yield five gallons. Prior to brewing, use a permanent marker or tape to indicate the five gallon level on your fermenter.
What is DME Brewing?
DME is just liquid malt extract that has been all the way dried out into a powder form. Some of the benefits of DME are that it can be stored for a long time and that it will not darken your beer during a boil like liquid malt extract can.
Can you substitute LME for DME?
Yes, you can substitute one for the other. One pound of LME is equivalent to about 0.8 lbs of DME. Either one can be added almost any time during the boil.
Is DME the same as LME?
DME is created the same way as LME except it goes through an additional dehydration step which reduces the water content down to about 2 percent. Because of the lower water content, DME tends to have a better shelf life without the darkening issues of light malt extract.
How long is LME good for?

While LME is said to have a shelf life of up to two years under ideal conditions (cool, dark and dry), it does have the tendency to experience degradation over time. The color of LME can nearly double when stored improperly and/or for long periods of time.
