Can you cellar an IPA?
Regardless of alcohol content, IPAs are not good candidates for cellaring. Hop flavors fade with time, and what’s left behind after those flavors are gone generally isn’t good.

How long are Imperial IPAs good for?
In short, you have three weeks from the date of production for all the flavors to shine through. The short answer doesn’t tell the whole story, though, especially when you consider that, in many cases, an IPA retains flavor for up to three months.

Maintain the storage/cellar temperature at between 10 – 12 deg C. When cask beer has been delivered make sure they are placed into the storage/cellar as soon as possible. If the distance from the storage/cellar to the pump is quite far make sure the beer line is suitably cooled.

Should you refrigerate IPA?
You should definitely store them in the fridge as heat (and light) are the biggest enemy of hops. Personal preference dictates what temperature you drink them at, I tend to drink the lower ABV ones quite cold but the DIPA’s and TIPA’s get exponentially warmer.
What does old IPA taste like?

Should you drink IPA cold?
Flavour reveal Only when you serve it at a warmer temperature do the flavours reveal themselves. An exotically hopped IPA will have almost no aroma if served at a temperature of just above freezing. If you let it slowly warm up, the aromas will start to come out of their shell.
